Fiesta Pumpkin Dip

I can't say that I'm one for pumpkin spice latte, but I did find this recipe for fiesta pumpkin dip intriguing for an autumn entertaining dish. If you are a PSL fan, then you'll love this recipe, too! It is very tasty and of course, easy to make!

Ingredients

(1) 15 oz. can of pumpkin

(1) 13 oz. jar of corn & black bean salsa (or cowboy caviar)

12 oz. of shredded Mexican cheese

(1) bag of tortilla chips (I used pumpkin tortilla chips ;-)

FYI...My mixture turned out grainy because my cream cheese was frozen prior to this recipe.

However, the taste was the same ;-)

1. Mix pumpkin, black bean & corn salsa and cream cheese in a bowl

2. Pour into a 2 qt pot

3. Heat over medium heat and fold in the shredded Mexican cheese

4. Heat for about 10 minutes until the mixture is warmed throughout

5. Serve warm with tortilla chips and enjoy!

*I served as an appetizer with mini tacos!
