At The Market In My Muumuu & Fiesta Spaghetti Recipe
This little girly went to the market in her Muumuu!
It's been a while since I've posted a recipe. I have another one for you today. This one you'll say was well worth the wait! It's a fun one for summer that can be made to enjoy at home, or to take with you for a summer get together. It's so colorful and yummy. Just the way I like my summer dishes! I think it's quite festive and innovative, combining Mexican and Italian classics. This one can either be the main dish, or it can easily take the side dish seat next to grilled companions like hamburgers, hot dogs or steaks. Either way it's served, Fiesta Spaghetti is a delicious taco inspired casserole that's made for sharing!
I'm sharing this dish with a little fashion on the side! I loved wearing this comfy outfit, and I dressed it up with a belt to cinch my waist for a chic look. This Muumuu dress is unique in that it has spaghetti straps (no pun intended) and cold shoulder sleeves. You may not be able to tell because of my height, but it's also a high-low style dress (higher in the front and lower in the back). I tied a side knot to keep it from dragging on the floor (probably not an issue for someone taller than 5 feet ;-) The side knot is my signature move for maxi dresses when I don't want to take them to be hemmed. It's summer time, so consider the side knot a little "fiesta" style, too...showing off a little leg!

Fiesta Spaghetti Recipe
Ingredients
8 oz. spaghetti (I used angel hair pasta)
1 1/4 pounds of lean ground beef or ground turkey (I used ground turkey)
(1) 1 oz. pack of taco seasoning
2/3 cup water
(1) 10.75 oz. can of cream of chicken soup
(1) 10 oz. can of diced tomatoes with green chilies, undrained (*Remember to get mild if you don't want the heat!)
(1) 8 oz. Velveeta cheese, cubed
1 1/2 cups of shredded taco/Mexican cheese
*Optional- avocado, sour cream, black olives and salsa to garnish
Instructions
-Preheat oven to 350 degrees
-Lightly spray a 9x9-inch baking dish with cooking spray and set aside
-Cook pasta according to package directions. Drain & set aside
-In a large skillet cook ground beef over medium-high heat until brown
-Drain and return meat to the skillet
-Add taco seasoning and water, stirring to combine. Cook for 5 minutes
-Stir in cream of chicken soup, Velveeta and canned tomatoes. Reduce heat to low, stirring until the cheese melts
-Mix in the cooked spaghetti and pour mixture into the baking dish
-Top with the shredded cheese
-Bake for 20-30 minutes, or until heated through
-Set out chopped avocado, sour cream, black olives & salsa for garnish
-Serve and enjoy!
P.S...Makes for great leftovers, too!
